Gluten-Free Sweet Dark Soy Sauce

Sweet Dark Soy Sauce is a special recipe from Taechiu (Teochew) cuisine. It is made from soybeans fermented with sea salt, without the use of wheat flour or wheat, ensuring it is entirely gluten-free. It is simmered with cane sugar to capture the sweet aroma of soy sauce while retaining its salty flavour and dark brown colour. It is used to enhance the visual appeal of dishes without making them overly sweet, making it suitable for stir-fried noodles, stir-fries with soy sauce, adding colour to soups, and stir-fried dishes.
